Biryani Seasoning and Tender Jackfruit Pieces
PREP & SOAK Soak jack fruit in hot water for 5–7 mins and drain. Slice 2 medium onions.
SAUTÉ Heat 2 tbsp ghee in a pressure cooker. Sauté onions until golden.
ADD MASALA Add tender jack fruit + full seasoning pack. Sauté until well coated.
ADD RICE & COOK Add 350 g soaked rice + 2 bowls water and salt to taste. Pressure cook for 1 whistle on high + 2 on low. Rest, fluff and serve hot.

1. PREPARE THE JACKFRUIT & RICE
Soak the Tender Jackfruit in hot water for 5–7 minutes. Drain well and keep aside. Meanwhile, wash and soak 350 g basmati rice according to the pack instructions or until the grains are sufficiently hydrated.
2. SAUTÉ THE ONIONS
Heat 2 tbsp ghee in a pressure cooker over medium heat. Add the sliced onions and sauté until they turn golden brown. Take care not to burn them, as this can affect the flavour of the biryani.
3. ADD THE JACKFRUIT & SEASONING
Add the drained tender jackfruit pieces to the cooker. Sprinkle in the full seasoning pack and lightly sauté until the jackfruit is evenly coated with the spices and the flavours begin to come together.
4. ADD THE RICE & PRESSURE COOK
Add the soaked rice along with 2 bowls of water. Add salt to taste and give everything a gentle mix, making sure the rice and jackfruit are evenly distributed.
Close the pressure cooker and cook for 1 whistle on high heat, followed by 2 whistles on low heat.
Once cooked, allow the pressure to release naturally.
5. REST & FLUFF
Let the biryani rest for a few minutes before opening the cooker. Gently fluff the rice with a fork or spoon, taking care not to break the grains.
6. GARNISH & SERVE
Garnish with fresh coriander or mint, if desired. Serve your Tender Jackfruit Biryani hot with raita, salad or your favourite accompaniment.
